At Cumberland Falls Chocolate Pie
1 cup white sugar
3/4 cup good quality butter (no margarine)
3 squares of unsweetened chocolate (the better the chocolate, the better the pie)
1 1/2 tsp. of real vanilla extract/or to bring this pie to the next level use Godiva Chocolate Liqueur
Now, just so I have given you fair warning this is not available in those cute little bottle sizes. You will be looking at approximately $25.00 for 750 ml on a good day. I wish I could tell you that that the pie will be just as good without it... Unfortunately, that would be a falsehood. However, we are in a recession and if the $25.00 plus pie ingredients puts you over the top of "happiness budget", the vanilla will suffice and create a wonderful pie.
In a small mixing bowl cream sugar and butter about four minutes or until it is beautifully fluffy and light. Stir in cooled chocolate and vanilla/Godiva. Add eggs, one at a time beating for one minute after each egg addition on medium speed. Scrape down the sides often so your pie filling is together. Voila!
Now, you can place this glorious mixture in a regular pie shell, graham cracker crust or my personal favorite, a oreo cookie crust. Chill at least 5 hours and overnight is better yet. Garnish with whipped cream and chocolate curls.
Plan for a long walk after dinner and each successive day for weeks and each step will be worth it.
