Asheville Bed and Breakfast Inn Awesome Breakfast is the expectation of most of our guests. Frankly though, not everyone wants to start the day with a large offering. Some would much rather just amble into the morning enjoying a lighter fare containing their more ravenous intentions until the sun is higher in the sky. Now, lighter does not have to mean less than tasty.

Asheville Bed and Breakfast Granola Perfected
8 cups of rolled oats (not instant)
1 1/2 cup of toasted coconut
2/3 cup of sesame seeds
2/3 cup of flax seeds
1/2 cup raw sunflower seeds
1 cup of chopped raw cashews, almonds, pecans or walnuts (your preference)
1 cup craisins
2/3 cup honey
2 T. good quality olive oil
2 tsp. vanilla extract
3/4 tsp salt
Preheat the oven to 300 degrees. In a large bowl in which you can mix all ingredients effectively place the first seven ingredients. In a small saucepan, combine the honey, olive oil, vanilla and salt. Heat together until smooth and pour over the dry mix. Spread on buttered cookie sheet. Bake 35-45 minutes or until golden brown stirring every 10-15 minutes to ensure uniform browning.
