Fastest Dinner on Record from your Asheville Bed and Breakfast

How many times do you find yourself going out to dinner, usually ingesting something much more unhealthy than you would make at home and the primary reason you are doing this is ...It's perceived as being less trouble?  Here is the fastest dinner on record from your Asheville Bed and Breakfast.

Tomato Quesadilla:  (Variations at your will)

1 can of diced tomatoes- I use the ones called petite diced ( with spices, fire-roasted or whatever strikes your fancy)
2/3 cup of frozen corn

1/3 cup chopped onion
2 T. chopped fresh cilantro

2/3 cup rinsed black beans
1/4 or less tsp. of ground red pepper  * Do not add this if you have chosen fire roasted tomatoes
1 tsp. fresh lime juice
1/4 tsp. garlic salt
7 ozs. monterey jack cheese (I buy the one already shredded)



Add tomatoes, corn, beans, onion, cilantro, garlic salt,red pepper and lime juice all together in bowl.

Heat cast iron skilled over med. heat only to brown and melt cheese.  Place tortilla on skillet. Spread about 1/3 cup cheese of one side of each tortilla.  Spoon 1/4 cup salsa in over cheese. Fold tortilla in half over filling.  Can serve as whole or cut into slices.  Sour cream on side.  Delicious, healthy and less than 20 mins.  You couldn't even be seated and order ....No less be served in that much time.
