Most of us will be hosting some form of Memorial Day party and there is always angst regarding what components can be brought to bear to creating the perfect party. Here is a Memorial Day Extravaganza Appetizer from your Asheville Bed and Breakfast guaranteed to put a smile on their faces because it is simply delicious! Make this cheese ball at least 24 hours before use and 48 hours would be even better as this allows all the wonderful flavors to merge, meld and grow even more scrumptious with time. Never a bad thing.
Memorial Day Cheese Ball Perfection
2 8oz. packages of cream cheese, allow time to soften
2 8oz. blocks of cheddar cheese,shredded using fine selection on grater (use nice quality cheese for a good end product.
3 T. onion, chopped fine
6 T. pimento, drained very well and minced
6 T. green pepper,chopped fine
6 T. red pepper, chopped fine
3 tsp. of Worcestershire sauce (We use Lee and Perrins and I do think it best)
1 T. lemon juice
A bit of cayenne pepper (you know your taste for heat.)
3/4 cup chopped walnuts, pecans or pistachio nuts, your choice. Toast these.
Beat cream cheese until smooth with an electric mixer; add the Cheddar to this after the cream cheese is well creamed. Mix in all remaining ingredients. You will want to start with the least amount of cayenne and if you want a bit more heat, add more. You cannot remove so be careful.
Place a piece of plastic wrap down on the counter emptying the contents of your bowl unto it working to form a ball.
Chill this thoroughly. Roll in the chopped nuts and serve with crudites or crackers or both. Fruit is also an excellent choice and we do a fun thing at the inn because by adding strawberries and blueberries to the tray it presents a colorful Memorial Day fare presenting the red, white and blue using the crackers (Carr water crackers for the white and the berries for the red and blue.
